~ Easy Minestrone ~

This is a soup that I just "made up" so feel free to add ingredients of your choice!  It's great for fall evenings and is full of protein. My grandkids love it and I made this batch for them on the spur of the moment. Their parents were extremely busy so I figured a meal would be nice for all!

I don't often use canned products due to the sodium, however, in this dish it hardly matters. These are the ingredients I had on hand.  I rarely am ever without fresh garlic but guess what? It happened here!  :-)

I saute the onion and garlic in about a tablespoon of olive oil and then just add all the beans, broth, tomatoes.  I drain and rinse the black beans...the others I add juice and all.  I always add other seasonings too ~ that's up to you.

I remembered that I had 1 zucchini left so I grated it in the mini-processor and added it. I was out of the tiny pasta the kids like so I added frozen corn ~ something else they love.  You can tell I needed to go grocery shopping!  In the past I've added grated carrots, chopped spinach, kale, whatever.  It's strictly up to you! 

I did keep one dish for me ~  ;-)

I do love a good bowl of soup. This looks delicious.
I make a 7 can soup that we love. It has 3 cans of campbells minestrone within it and is so tasty.

Very healthy and yummy, it is supposed to really get cold for the weekend with a Nor'Easter predicted for Saturday, so I better stock up on my canned items!! xo

Soup is my one love when it comes to food. I do make it at least three times a month... but I have to tell you, I can't eat caned soup! My cardio doc would beat me! In fact no can or box of anything, will grace my pantry.. Salt makes me blow up and I always end up in the hospital being pumped full of Lasix... but I so love what you did and it sounds very good!
When I make soup its work, soaking dried beans etc. but that does not stop me... very nice post... yummm to soup.

I love making up recipes...especially soups and stews. You need so little and you can raid the vegetable bin!! This looks yummy...the beans are SO good for you!!

Hi Pat,

This sounds good! I have a couple of very similar recipes where you put the canned goods, juices and all, in the soups. One of mine might be the same as your first commenter because you do add at least 2 cans of minestrone...I'm sure there are many similar options. Don't you love these dishes that are so easy but still so hearty and have that good, home made taste?!
I made chili tonight but have been thinking that it's about time to make a minestrone of sorts.
