~ The Best Things In Life ~



I feel a bit guilty posting about "things" when so many have lost everything. The devastation from Sandy just seems to continue to get worse. Who would ever think that in the midst of horrific flooding, fires would burn away complete neighborhoods?

If  you feel so inclined, it's very easy to donate to the Red Cross via texting from your phone. A $10 charge will be reflected on your upcoming wireless bill ~ a small pittance compared to having "nothing".

Just text Red Cross to 90999 ~ easy, peasy.  I'd like to also ask that you continue to pray, send good thoughts, light candles, speak positives...whatever your choice might be for all the people in Sandy's wake.

~ Your Bank Account ~



Just thought I'd share that my bank account was compromised this week.  It's been more than a headache and a hassle to try to get everything straightened out.  I've felt every emotion...anger, puzzled, vulnerable and oh yes, tears and vulnerability!  These hackers are incredibly brilliant and it's extremely sad that their talents are not used in a positive way.  

Another thing...the day I discovered this, I received phone calls back to back...constantly, from every area code imaginable as well as Anonymous, Private, etc.  I normally never answer the phone if I don't recognize the number but I did that day.  There would be no response on the line and then a  click that would disconnect.  A few were off-shore....determined by the number of 1's in front of the phone number plus an accent IF anyone responded.

I'm saying all of this just as a reminder to please check your accounts daily!  It had been a couple of days for me and I won't do that again.  I had to open a new account and you know what that entails....more paperwork, new debit card, checks, etc.

I also changed my home phone # due to the annoying calls.  Doing that with AT&T almost caused me to turn into Freddie Krueger!  ;-) They did offer a word of advice...to be sure and check my phone bill carefully for the next couple of months.  Some of those "illegal" numbers can rack up high costs on your phone bill.  IF that should happen, they will delete the charges.

My daughter's boss and his wife just went through this twice.  One thing the bank advised them to do was to have a separate debit card for entertainment, dining out or anytime you use it in public.  It can be loaded with $200-$300 dollars, transferred from your "real" account.  IF the card disappears from your sight while out, then you know the max that could be stolen.  I think this is a great idea!  The extra card is NOT linked in any way to your "real" account as far as the public knows.  Hope I've explained this clearly....

I so hope that no one else has this dreadful experience!

Just a little Halloween decor!  I found the charger at Michael's for $1. Love the green but this was the only one left.  It would be fun to have a set for a tablescape. I had the ribbon and the spider so just added some glitter letters.

~ Fiesta Rice Salad ~


This is so easy and so tasty!  I made it often during the summer as a meal for myself.  It's great this time of year as well and can be a side dish for Mexican style meals.



  • 1/4 cup fresh lime juice (4 limes)
  • 3 T. roasted tomato salsa or your choice
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 2 cups cold cooked brown rice
  • 1 cup cooked fresh or thawed frozen corn kernels 
  • 15-oz. cans black beans, drained and rinsed
  • red bell pepper, seeded and diced 
  • 1 cup small cherry tomatoes, halved 
  • scallions, thinly sliced 
  • 1 avocado
  • 1 T or more  chopped fresh cilantro, optional 

  •  In a small bowl, stir together lime juice,  salsa, cumin and salt. In a large bowl, stir together rice and corn, breaking up any rice clumps. 
  • Pour lime-juice mixture over rice mixture and stir well to coat. Add beans, bell pepper, tomatoes and scallions, and toss gently to combine.
  • Just before serving, pit, peel and dice avocado, and stir gently into salad. Sprinkle with cilantro and serve.
  • I found the recipe online somewhere...cannot remember where.  The original called for about 1-3 T. oil which I did not use.  Between the lime juice and the salsa, there's enough liquid. I also used the frozen brown rice....in the microwave for 90 seconds and it's done!   I hope you enjoy!

I'm sorry to be late posting the winner.  I had a Dr. appt this morning. Although I really didn't have to wait but about 5 min., the traffic was horrendous and I had a couple of errands to do while I was out.

~ Goose Creek Candle ~


I was recently the lucky winner of a Goose Creek Candle giveaway over at Korrie's at Red Hen Home.  The candle arrived today and oh my, it is awesome!!  I chose an incredible fragrance...Whipped Pumpkin Latte.  It smells divine!  Honestly, it had just been burning about 5-10 minutes and the rooms already smelled like a pumpkin pie baking. 

I love the jar container...very pretty and no ugly labels to try and hide. The top is very tailored and the candle looks so pretty, lit or closed.


Can you smell it?  Isn't it divine?



I'm a true candleholic and I'm very particular about the candles that I purchase. Even though this is a wonderful gift, I will certainly buy from this company in the future!  Excellent quality and speedy shipping.

~ Rustic Pear Tart ~


The first pie crust is from the original recipe and a healthy variation. Use at your own discretion. :)

Ingredients

Crust:

  • 1/2 cup whole-grain pastry flour or regular whole wheat flour
  • 1/2 cup all-purpose flour
  • 2 tsp granulated sugar
  • 1/8 tsp salt
  • 4 T. cold, unsalted butter, cut into small pieces
  • 2 T. low fat buttermilk
  • 3 T. ice water

Filling:

  • 3 medium pears
  • 1 T.  lemon juice
  • 1 T. plus 1 tsp cornstarch
  • 3 T. brown sugar
  • 1/8 tsp ground cinnamon

Glaze:

  • 1 tsp honey
  • 1/4 tsp boiling water

To prepare the crust, in a medium bowl whisk together the whole-wheat pastry flour, all- purpose flour, granulated sugar and salt. Add the butter and using two knives or a pastry cutter, cut the butter into the flour mixture until you get a pebbly, course texture. In a small bowl combine the buttermilk and ice water. Using a fork, gradually mix the buttermilk mixture into the flour mixture. Pat the dough into a 4-inch round and wrap in plastic wrap. Refrigerate for 30 minutes. 

OR ~  Use a refrigerated pie crust and call it good!  :)   I love Marie Callender's frozen pie crusts...as good as homemade I promise.,

In the meantime, preheat the oven to 425 degrees F, and prepare the filling. Peel the pears, core them and cut into 1/4-inch slices. In a large bowl toss the pear slices with the lemon juice. Sprinkle in the cornstarch, brown sugar and cinnamon and toss until the pears are evenly coated. Set aside.
On a lightly floured surface, roll the chilled dough into a large circle about nine inches in diameter. Line a baking sheet with parchment paper, and draping the dough over the rolling pin, transfer to the prepared baking sheet. If the dough breaks at all patch it up with your fingers.
Arrange the pears in a mound in the center of the dough, leaving a 2-inch border. Fold the border over the filling. It will only cover the pears partially and does not need to be even.
Bake the tart for 15 minutes, and then reduce the oven temperature to 350 degrees F, keeping the tart in the oven all the while, and bake for another 40 minutes, until the pears are tender and the crust is golden brown.
In a small bowl stir together the honey and boiling water to make a glaze. When the tart is done remove it from the oven and brush the honey glaze all over the top of the fruit and crust. Transfer to a plate to cool slightly. Cut into 6 wedges and serve warm or at room temperature. Awesome with Vanilla Bean ice cream! This recipe is adapted from Southern Living, eons ago.

~ Welcome October! ~



I am so excited each year when October arrives!  It's my favorite month. December comes in a close 2nd. :)  It was 59' here this morning ~ perfectly delightful!  After having the 90's for so long, it's such a welcome change.

I really don't have anything exciting to share as far as food, projects, etc. Just a "hello" and thinking of you!
